  • 2 cups crushed tomatoes (preferably San Marzano for that authentic taste)
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon sugar to balance acidity
  • 1/2 teaspoon salt or to taste
  • 1/4 teaspoon black pepper freshly ground for best flavor
  • 1/4 teaspoon red pepper flakes optional, for a spicy kick

Method
 

Preparation
  1. In a medium saucepan, heat the olive oil over medium heat.
  2. Add the minced garlic and sauté for about 1 minute, until it becomes fragrant but not browned.
  3. Stir in the crushed tomatoes, using a spoon to break them up a bit if they’re too chunky for your taste.
  4. Add the dried oregano, basil, sugar, salt, black pepper, and red pepper flakes (if using). Mix well to combine.
  5. Allow the sauce to simmer on low heat for 10-15 minutes, stirring occasionally.
  6. Taste the sauce and adjust with more salt, sugar, or herbs based on your preference.
  7. Let the sauce cool before using it on your pizza, or store it in an airtight container in the refrigerator.

Notes

For fresh herbs, use three times the amount of fresh herbs as you would dried. Store leftovers in an airtight container for up to 5 days, or freeze for up to 3 months.
