  1. Add the frozen pineapple chunks to your high-speed blender.
  2. Pour in the coconut milk to enhance creaminess and tropical flavor.
  3. Drizzle in the honey, adjusting to your desired sweetness.
  4. Blend on low speed, increasing to high, scraping down the sides as needed, until reaching soft-serve consistency (3-5 minutes).
  5. Taste and add more honey if needed; blend again.
  6. Serve immediately for the best texture, or freeze for 1-2 hours if firmer ice cream is preferred.

Notes

For best results, freeze pineapple chunks overnight and store leftovers in an airtight container for up to a week. Take it out 10-15 minutes before serving to soften for easy scooping.
