Pasta and Broth
  • 2 cups homemade pasta Use your favorite pasta recipe.
  • 4 cups chicken or vegetable broth Opt for halal chicken broth for dietary preferences.
Vegetables
  • 1 cup diced tomatoes
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 1 medium onion, diced
  • 2 cloves garlic, minced
Seasonings
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Preparation
  1. Start by chopping your vegetables and mincing the garlic. Having everything ready will make the cooking process smoother.
Cooking
  1. In a large pot, heat a splash of olive oil over medium heat. Add in the diced onion, chopped carrots, and celery. Cook, stirring occasionally, for about 5 minutes until the vegetables are soft and fragrant.
  2. Stir in the minced garlic and sauté for another minute until it’s golden and aromatic.
  3. Pour in the chicken or vegetable broth along with the diced tomatoes. Bring everything to a gentle boil.
  4. Add the Italian seasoning, salt, and pepper to taste.
  5. Once the broth is boiling, add in your homemade pasta. Reduce the heat and let it simmer for about 8-10 minutes or until the pasta is cooked al dente.
  6. Give your soup a taste and adjust the seasoning if necessary.
  7. Once everything is perfectly cooked, ladle the soup into bowls and garnish with fresh parsley.

Notes

This soup can be customized with any vegetables or proteins you have on hand. Store leftovers in an airtight container in the refrigerator for up to 3 days, or freeze for longer storage. Reheat gently on the stove, adding a bit of water or broth if it becomes too thick.
