Preparation
- Preheat your oven to 350°F (180°C).
- In a large bowl, cream together the softened butter and granulated sugar until it becomes light and fluffy.
- Beat in the egg and add the vanilla extract, mixing until well combined.
- In a separate bowl, whisk together the all-purpose flour, cocoa powder, baking soda, and salt.
- Gradually mix the dry ingredients into the wet mixture until a soft cookie dough forms.
- Using a cookie scoop or tablespoon, drop the dough onto a lined baking sheet, spacing them a few inches apart.
- Bake in your preheated oven for about 10-12 minutes or until the edges look firm but the centers remain soft.
- Allow the cookies to cool for a couple of minutes on the sheet, then transfer them to a wire rack to cool completely.
Prepare the Filling
- In a bowl, mix the powdered sugar and 2 teaspoons of vanilla extract until smooth.
- Spread a generous amount on the flat side of one cookie and sandwich it with another.
