  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1.75 cups all-purpose flour
  • 0.75 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
Filling Ingredients
  • 1 cup powdered sugar
  • 2 teaspoons vanilla extract For filling.

Method
 

Preparation
  1. Preheat your oven to 350°F (180°C).
  2. In a large bowl, cream together the softened butter and granulated sugar until it becomes light and fluffy.
  3. Beat in the egg and add the vanilla extract, mixing until well combined.
  4. In a separate bowl, whisk together the all-purpose flour, cocoa powder, baking soda, and salt.
  5. Gradually mix the dry ingredients into the wet mixture until a soft cookie dough forms.
  6. Using a cookie scoop or tablespoon, drop the dough onto a lined baking sheet, spacing them a few inches apart.
  7. Bake in your preheated oven for about 10-12 minutes or until the edges look firm but the centers remain soft.
  8. Allow the cookies to cool for a couple of minutes on the sheet, then transfer them to a wire rack to cool completely.
Prepare the Filling
  1. In a bowl, mix the powdered sugar and 2 teaspoons of vanilla extract until smooth.
  2. Spread a generous amount on the flat side of one cookie and sandwich it with another.
