Homemade Mixed Berry Pop Tarts

Ingredients
  

For the Dough
  • 1 cup all-purpose flour Keep cold for best results.
  • 1/4 cup sugar
  • 1/4 teaspoon salt
  • 1/2 cup cold unsalted butter, cubed Keep cold.
  • 1/4 cup cold water Add gradually.
  • 1 egg for egg wash
For the Filling
  • 1 cup mixed berries (strawberries, blueberries, raspberries) Mash before use.
For Icing
  • Powdered sugar for icing Mix with water to taste.

Method
 

Preparation
  1. In a mixing bowl, combine the flour, sugar, and salt. Cut in the cold butter until the mixture resembles coarse crumbs.
  2. Gradually add cold water, mixing just until the dough holds together.
Chill the Dough
  1. Shape the dough into a disc, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
Make the Filling
  1. While the dough is chilling, mash the mixed berries and add a little sugar to enhance their flavor.
Roll out the Dough
  1. Once chilled, roll out the dough on a floured surface to about 1/8-inch thickness. Cut rectangles, roughly 3x4 inches.
Assemble the Pop Tarts
  1. Place a tablespoon of the berry filling on half of the rectangles. Brush the edges with a bit of egg wash, then place another rectangle on top. Seal the edges with a fork.
Bake
  1. Preheat your oven to 375°F (190°C). Place the pop tarts on a baking sheet lined with parchment paper. Brush the tops with the remaining egg wash. Bake for about 20 minutes, or until golden brown.
Cool and Ice
  1. Allow the pop tarts to cool slightly and then drizzle with icing made from powdered sugar and a little water.

Notes

Substitutions with other fruits like peaches or cherries can be made, adjusting sugar as needed. Chill the dough well to maintain a flaky texture.
