  • 2 cups cooked chicken breast, shredded or sliced
  • 1 cup lettuce, chopped
  • 1 cup bell peppers, thinly sliced
  • 1 cup tomatoes, diced
  • ½ cup cucumber, sliced
  • ½ cup shredded cheese (optional) For added flavor
  • 4 pieces whole wheat wraps or tortillas
  • ¼ cup hummus or your favorite dressing
  • to taste Salt and pepper
  • as needed Olive oil for grilling Optional

Method
 

Preparation
  1. Start by shredding or slicing your cooked chicken breast. Dice your veggies: tomatoes, cucumber, and bell peppers.
  2. On medium heat, place a wrap on a pan for about 20 seconds on each side, just until warm and pliable.
  3. Spread a generous layer of hummus or dressing on the wrap. Layer with the chicken and vibrant veggies.
  4. Sprinkle salt and pepper across your layered ingredients. Optionally, add shredded cheese.
  5. Start folding the sides inward and then roll from the bottom to the top tightly.
  6. Slice your wrap in half diagonally and arrange beautifully on a plate.

Notes

Wrap each lunch wrap tightly in plastic wrap or store in an airtight container. Lasts up to 3 days in the fridge.
