Ingredients
  

Fresh Blackberry Filling
  • 4 cups fresh blackberries (or frozen, thawed) Use fresh for best flavor.
  • 1 cup granulated sugar
  • 1 tablespoon lemon juice
Cobbler Batter
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • ½ cup unsalted butter, melted
  • 1 cup milk
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease your baking dish to prevent sticking.
  2. In a medium bowl, combine the blackberries, ½ cup of granulated sugar, and lemon juice. Toss gently and set aside to let the berries release their juices.
  3. In a large bowl, mix together the flour, remaining ½ cup of sugar, baking powder, and salt. Create a well in the center and add the melted butter, milk, and vanilla extract. Stir until just combined; the batter will be somewhat lumpy, and that’s okay!
  4. Pour the batter into the greased baking dish: Spread it evenly to cover the bottom.
Baking
  1. Spoon the blackberry mixture over the batter, allowing some of the juices to escape. Don’t stir!
  2. Place in the preheated oven and bake for about 30-35 minutes, or until the top is golden brown and the fruit is bubbly.
Serving
  1. Let your cobbler rest for about 10 minutes before serving, preferably warm with a scoop of vanilla ice cream.

Notes

For best flavor, use fresh blackberries. Allowing the cobbler to cool helps it set and makes slicing easier. Experiment with adding spices like cinnamon or nutmeg for extra flavor.
