Homemade Hot Pockets

Ingredients
  

Dough
  • 2 cups Pizza dough or homemade pastry dough Store-bought dough works too.
Fillings
  • 1 cup Cooked meat (chicken, beef, or turkey)
  • 1 cup Vegetables (bell peppers, spinach, mushrooms - whatever you like)
  • 1 cup Cheese (mozzarella, cheddar, or favorite cheese)
  • to taste Herbs and spices (garlic powder, Italian seasoning, salt, and pepper)
  • 1 Egg For egg wash, optional.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) while you prepare the filling.
  2. In a large bowl, mix your cooked meat, veggies, and cheese. Add herbs and spices to taste.
  3. On a floured surface, roll out your pizza or pastry dough to about 1/4 inch thick.
  4. Using a knife or pizza cutter, slice the rolled dough into rectangles or circles, depending on your preferred shape.
Assembly
  1. Place a generous spoonful of the filling on one half of each dough piece. Be careful not to overfill!
  2. Fold the other half over the filling, and crimp the edges with a fork to seal.
  3. Beat the egg and brush it over the tops of the pockets to achieve a golden color while baking.
Baking
  1. Place the Hot Pockets on a lined baking sheet and bake for 15-20 minutes, or until golden brown.
  2. Let them cool for just a few minutes before diving in to enjoy!

Notes

Make sure not to overfill your pockets; use leftover dough to create smaller bites or decorative shapes. For added spice, include jalapeños or hot sauce in your filling. You can freeze unbaked Hot Pockets for up to 2 months.
