Ingredients

  • 1 cup shredded coconut
  • 1/2 cup almond flour Can substitute with oat flour or finely ground oats.
  • 1/4 cup cocoa powder
  • 1 pinch salt
Wet Ingredients
  • 1/4 cup honey or maple syrup Agave syrup is a vegan alternative.
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. In a large mixing bowl, combine the shredded coconut, almond flour, cocoa powder, and a pinch of salt. Mix well until all dry ingredients are blended.
  2. In a separate bowl, combine the honey (or maple syrup) and vanilla extract. Stir until combined.
  3. Pour the wet ingredients into the dry mixture and mix until a thick, cohesive dough forms.
  4. With lightly greased hands, take small portions of the mixture and roll them into bite-sized balls or press them into silicone molds for fun shapes.
  5. Place the bites on a parchment-lined tray and refrigerate for at least 30 minutes to set.
