Ingredients
  

Dry Ingredients
  • 2 cups all-purpose flour
  • 1/4 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
Wet Ingredients
  • 1/2 cup unsalted butter, cold and cubed
  • 1 cup Greek yogurt
  • 1 teaspoon vanilla extract
  • 1 egg optional, for egg wash

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine the all-purpose flour, sugar, baking powder, and salt. Whisk until thoroughly mixed.
  3. Add the cold, cubed butter to the flour mixture and blend until the mixture resembles coarse crumbs.
  4. Fold in the Greek yogurt and vanilla extract, stirring gently until just combined.
  5. Lightly flour your work surface, transfer the dough, and gently press it into a 1-inch thick round disc.
  6. Transfer the disc onto a baking sheet lined with parchment paper and cut it into wedges.
  7. Brush the top with a beaten egg if desired.
  8. Bake for 15 minutes or until the scones are golden brown.
  9. Let them cool for a few minutes before serving them warm with toppings of your choice.

Notes

Keep butter cold for flaky scones. If Greek yogurt isn't available, regular plain yogurt can be substituted. Watch baking closely to prevent overbaking. Do not overmix.
