Preparation
- Preheat your oven to 400°F (200°C).
- Peel the sweet potatoes and slice them into bite-sized pieces.
- In a small saucepan, melt the butter over medium heat, add the minced garlic and sauté for about 1-2 minutes until fragrant.
- Place the sweet potato pieces in a large mixing bowl, pour the garlic butter over them, and sprinkle with salt and pepper. Toss until evenly coated.
Baking
- Spread the sweet potatoes in a single layer on a baking sheet and bake for about 25-30 minutes or until golden brown, flipping halfway through to ensure even cooking.
- Once out of the oven, toss your sweet potatoes with fresh herbs if using, and serve immediately.
Notes
For longer storage, you can freeze leftovers; reheat in the oven at 350°F (175°C) for 10-15 minutes to regain crispiness.
