Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Peel the sweet potatoes and slice them into bite-sized pieces.
  3. In a small saucepan, melt the butter over medium heat, add the minced garlic and sauté for about 1-2 minutes until fragrant.
  4. Place the sweet potato pieces in a large mixing bowl, pour the garlic butter over them, and sprinkle with salt and pepper. Toss until evenly coated.
Baking
  1. Spread the sweet potatoes in a single layer on a baking sheet and bake for about 25-30 minutes or until golden brown, flipping halfway through to ensure even cooking.
  2. Once out of the oven, toss your sweet potatoes with fresh herbs if using, and serve immediately.

Notes

For longer storage, you can freeze leftovers; reheat in the oven at 350°F (175°C) for 10-15 minutes to regain crispiness.
