Ingredients
  

For the pastry dough
  • 1 cup all-purpose flour
  • 1/4 cup unsalted butter, softened
  • 1/4 cup sugar
  • 1 large egg yolk
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
For the filling
  • 1 cup mixed fresh fruits (e.g., berries, sliced kiwi, mango)
  • 1/2 cup fruit jam or glaze
  • to taste Powdered sugar for dusting (optional)

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, combine flour, softened butter, sugar, egg yolk, vanilla extract, and salt. Mix until the dough is well combined and forms a smooth texture.
  3. Cover the dough and refrigerate for 15 minutes.
  4. On a floured surface, roll out the dough to about 1/4 inch thick. Use a round cutter to cut out large circles, then fit them into a muffin pan or tartlet pan.
  5. Bake for 15-20 minutes or until edges are lightly golden brown. Allow to cool completely.
Assembly
  1. Meanwhile, wash and slice your fruits.
  2. Spread a thin layer of fruit jam or glaze on the bottom of each cooled tart shell, then carefully arrange the sliced fruits on top.
  3. Brush a little more fruit jam or glaze over the fruits to give them a pretty sheen.
  4. Dust with powdered sugar just before serving.

Notes

For best results, allow tarts to cool completely before adding fresh fruit. Store in the refrigerator for up to 2 days in an airtight container; can freeze shells separately.
