Preparation
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Chop the dried figs into small pieces and set aside.
- In a mixing bowl, whisk together the flour, baking powder, and salt. Set aside.
- In a separate bowl, cream the softened butter and sugar until light and fluffy, about 3–5 minutes.
- Beat in the eggs, one at a time, followed by the vanilla extract. Mix until well combined.
- Gradually add the dry mixture into the wet ingredients. Mix until just combined, then fold in the chopped figs.
- Drop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
Baking
- Place the cookies in the oven and bake for 10-12 minutes, or until the edges are lightly golden.
- Remove from the oven and let them cool on a wire rack. Enjoy these sweet creations warm or at room temperature!
