Ingredients
  

Fruits and Vegetables
  • 2 cups fresh figs, chopped Fresh figs provide the best flavor.
  • 2 cups apples, peeled and diced (preferably Granny Smith or Honeycrisp) Choose tart varieties for best balance.
  • 1 medium onion, finely chopped
Sweeteners and Acids
  • 1 cup brown sugar
  • 1/2 cup apple cider vinegar
Spices
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1 teaspoon salt

Method
 

Preparation
  1. Wash and chop your figs and apples into bite-sized pieces, peeling the apples for a smoother texture.
Cooking
  1. In a large saucepan over medium heat, add a drizzle of sunflower or canola oil and sauté the chopped onion until translucent, about 3 to 5 minutes.
  2. Add the figs, apples, brown sugar, apple cider vinegar, ginger, cinnamon, cloves, and salt to the pan, and stir well to combine.
  3. Bring the mixture to a gentle boil, then reduce the heat to low and let it simmer uncovered for about 20-25 minutes, stirring occasionally.
  4. Once the chutney thickens to a jam-like consistency, remove from heat and allow to cool.
Storage
  1. Transfer cooled chutney to sterilized jars for storage.

Notes

For best flavor, let chutney sit in the fridge for a few hours or overnight before serving. Store in an airtight container in the refrigerator for up to two weeks or freeze for longer storage. Reheat gently on low heat, stirring until the original texture and flavor are regained.
