Base Ingredients
  • 1 cup Medjool dates, pitted Make sure they're pitted
  • 1 cup walnuts or almonds Any nuts can be used as a substitute
  • 1/2 cup chocolate chips (dairy-free if desired)
  • 1/3 cup coconut milk
  • 1/4 cup maple syrup
  • 1/4 cup almond butter or peanut butter Choose based on preference
  • 1 tsp vanilla extract
  • to taste sea salt, for sprinkling Adds a sweet-and-salty contrast

Method
 

Preparation
  1. Start by pitting the Medjool dates if they aren't already pitted. Gather all your other ingredients so everything is ready to go.
Making the Base
  1. In a food processor, combine the pitted dates, walnuts (or almonds), almond butter (or peanut butter), maple syrup, and vanilla extract. Blend until the mixture resembles a sticky dough. You may need to scrape down the sides a couple of times to ensure everything is well-mixed.
Shaping
  1. Once your mixture is blended to a dough-like consistency, take small portions and roll them into bite-sized balls or press the mixture into a lined square dish for bar-style treats.
Chocolate Coating
  1. In a microwave-safe bowl, melt the chocolate chips and coconut milk together in 30-second intervals until smooth. Stir well to combine.
  2. Dip each ball into the melted chocolate until well-coated or pour the chocolate over the pressed mixture in the dish.
Setting
  1. Place the coated balls or dish in the refrigerator for about 15-20 minutes to let the chocolate set, and sprinkle a pinch of sea salt over the top before it hardens.
Serving
  1. Once set, cut them into bars or enjoy the balls as they are. Store leftovers in an airtight container in the refrigerator.

Notes

You can store these treats in the refrigerator for up to a week, or freeze them for up to three months. To enjoy, let them sit at room temperature to soften or microwave briefly (10-15 seconds) if frozen.
