Preparation
- Preheat your oven to 350°F (175°C) to ensure your loaf bakes perfectly.
- Grease a 9x5-inch loaf pan with butter or cooking spray, and optionally, line it with parchment paper for easier removal.
- In a large mixing bowl, beat together the softened butter and granulated sugar with an electric mixer until light and fluffy.
- Mix in the eggs, milk, fresh lemon juice, and lemon zest until fully combined.
- In another bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring gently just until combined. Avoid over-mixing; lumps are fine.
- Transfer the batter into the prepared loaf pan, spreading it evenly.
Baking
- Bake in the preheated oven for 50 to 60 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the loaf to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
