  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened Ensure it is at room temperature.
  • 2 large eggs Bring to room temperature.
  • 1/4 cup milk Can substitute with almond or soy milk for dairy-free.
  • 1/4 cup fresh lemon juice
  • 1 piece zest of 1 lemon Use a microplane for fine zest.
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) to ensure your loaf bakes perfectly.
  2. Grease a 9x5-inch loaf pan with butter or cooking spray, and optionally, line it with parchment paper for easier removal.
  3. In a large mixing bowl, beat together the softened butter and granulated sugar with an electric mixer until light and fluffy.
  4. Mix in the eggs, milk, fresh lemon juice, and lemon zest until fully combined.
  5. In another bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt.
  6. Gradually add the dry ingredients to the wet mixture, stirring gently just until combined. Avoid over-mixing; lumps are fine.
  7. Transfer the batter into the prepared loaf pan, spreading it evenly.
Baking
  1. Bake in the preheated oven for 50 to 60 minutes, or until a toothpick inserted in the center comes out clean.
  2. Allow the loaf to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Serving

Notes

Store leftovers in an airtight container at room temperature for up to 3 days, or wrap well in plastic wrap and freeze for up to 2 months. Thaw at room temperature or microwave for a few seconds to regain moisture.
