  • 3 pieces ripe bananas, mashed Use very ripe for maximum sweetness.
  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • pinch salt
  • 3/4 cup sugar
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, mash the ripe bananas with a fork until smooth.
  3. Stir the melted butter into the mashed bananas until well combined. Then add the beaten egg and vanilla extract, mixing everything together.
  4. Sprinkle the baking soda and salt over the mixture and lightly mix in. Fold in the sugar followed by the flour until just combined.
  5. Grease a 4x8 inch loaf pan with oil or butter.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
  8. Let the banana bread cool in the pan for about 10 minutes, then transfer to a wire rack to finish cooling.

Notes

Store banana bread tightly wrapped at room temperature for up to 3 days, or in the freezer for up to 3 months.
