Preparation
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, mash the ripe bananas with a fork until smooth.
- Stir the melted butter into the mashed bananas until well combined. Then add the beaten egg and vanilla extract, mixing everything together.
- Sprinkle the baking soda and salt over the mixture and lightly mix in. Fold in the sugar followed by the flour until just combined.
- Grease a 4x8 inch loaf pan with oil or butter.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
- Let the banana bread cool in the pan for about 10 minutes, then transfer to a wire rack to finish cooling.
Notes
Store banana bread tightly wrapped at room temperature for up to 3 days, or in the freezer for up to 3 months.
