Ingredients
  

Wet Ingredients
  • 3 pieces ripe bananas, mashed Ensure they are very ripe for the best flavor.
  • 1/3 cup melted butter Can substitute with vegetable oil if desired.
  • 1 teaspoon vanilla extract
  • 1 large egg, beaten
Dry Ingredients
  • 1 cup sugar Brown sugar can be used for a richer flavor.
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1 1/2 cups all-purpose flour
  • 1 pinch salt

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, stir together the melted butter and mashed bananas until well combined. Add the sugar, beaten egg, and vanilla extract. Mix until smooth.
  3. In a separate bowl, whisk together the flour, baking soda, salt, and ground cinnamon.
  4. Gradually fold the dry ingredients into the wet mixture until just combined. Be careful not to overmix; a few lumps are perfectly fine!
  5. Grease a 9x5 inch loaf pan or line it with parchment paper.
Assembly and Baking
  1. Pour half of the batter into the prepared loaf pan. Sprinkle half of the remaining cinnamon and sugar on top.
  2. Add the rest of the batter and finish with the remaining cinnamon-sugar mixture. Use a knife to gently swirl through the batter.
  3. Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
Cooling
  1. Allow the banana bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

Notes

To keep the banana bread fresh, store in an airtight container for up to three days or wrap in plastic wrap and freeze for up to three months. Reheat in the microwave for a moist texture.
