- In a mixing bowl, combine the creamy peanut butter and honey or maple syrup. Stir until smooth.
- Gradually add in the rolled oats, salt, and vanilla extract. Mix thoroughly until the oats are fully incorporated, and the mixture is thick.
- With clean hands, scoop a tablespoon of the mixture and roll it into a ball. Place the balls onto a lined baking sheet. Repeat until all the mixture is rolled out.
- In a microwave-safe bowl, melt the dark chocolate chips in 30-second intervals, stirring in between until fully melted and smooth.
- Dip each peanut butter ball into the melted chocolate, ensuring they’re fully coated. Use a fork to lift them out, allowing excess chocolate to drip off before placing them back on the baking sheet.
- Refrigerate the chocolate-coated bites for about 1 hour, or until the chocolate is set.
Notes
Store your Homemade Chocolate Peanut Butter Bites in an airtight container in the refrigerator for up to two weeks. For longer storage, freeze them for up to three months. Avoid microwaving as it alters their texture.
