  • 1 pound ground chicken
  • 1/2 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1/2 teaspoon cayenne pepper (optional) For added spice
  • natural sausage casings (optional) You can also form patties

Method
 

Preparation
  1. Ensure all utensils, surfaces, and bowls are clean.
  2. In a large mixing bowl, combine the ground chicken, chopped onion, garlic, olive oil, and all the spices. Use your hands or a spatula to blend until well combined.
  3. If using casings, rinse them thoroughly and stuff the mixture into the casing, twisting them into links. If not using casings, simply form the mixture into patties.
Cooking
  1. Heat a skillet over medium heat and add a splash of olive oil.
  2. Cook the sausages for about 6-8 minutes on each side or until golden brown and fully cooked. Aim for an internal temperature of 165°F (74°C) using a meat thermometer.
Serving
  1. Let the sausages rest for a few minutes, then serve them up with your favorite sides and toppings.

Notes

Store any leftovers in an airtight container in the refrigerator for up to 3-4 days, or freeze for up to 3 months. To reheat, warm in a skillet or oven.
