Preparation
- Ensure all utensils, surfaces, and bowls are clean.
- In a large mixing bowl, combine the ground chicken, chopped onion, garlic, olive oil, and all the spices. Use your hands or a spatula to blend until well combined.
- If using casings, rinse them thoroughly and stuff the mixture into the casing, twisting them into links. If not using casings, simply form the mixture into patties.
Cooking
- Heat a skillet over medium heat and add a splash of olive oil.
- Cook the sausages for about 6-8 minutes on each side or until golden brown and fully cooked. Aim for an internal temperature of 165°F (74°C) using a meat thermometer.
Serving
- Let the sausages rest for a few minutes, then serve them up with your favorite sides and toppings.
Notes
Store any leftovers in an airtight container in the refrigerator for up to 3-4 days, or freeze for up to 3 months. To reheat, warm in a skillet or oven.
