Preparation
- Start by washing and cutting the broccoli into florets. Then, slice the chicken breasts into bite-sized pieces.
Cooking
- In a large skillet, heat the olive oil over medium heat. Add the chicken pieces, seasoning them with salt and pepper. Cook until golden brown, about 5-7 minutes.
- Once the chicken is almost cooked through, add the minced garlic to the skillet and stir it with the chicken for about 30 seconds.
- Add the broccoli florets to the skillet and stir to combine. Pour in the soy sauce, and cover the skillet, cooking for an additional 5-7 minutes until the broccoli is tender but still bright green.
- Give everything a final stir, taste, and adjust the seasoning if necessary. If serving with rice, prepare that according to the package instructions.
- Serve the chicken and broccoli warm, over a bed of rice if desired.
