Preparation
  1. Start by washing and cutting the broccoli into florets. Then, slice the chicken breasts into bite-sized pieces.
Cooking
  1. In a large skillet, heat the olive oil over medium heat. Add the chicken pieces, seasoning them with salt and pepper. Cook until golden brown, about 5-7 minutes.
  2. Once the chicken is almost cooked through, add the minced garlic to the skillet and stir it with the chicken for about 30 seconds.
  3. Add the broccoli florets to the skillet and stir to combine. Pour in the soy sauce, and cover the skillet, cooking for an additional 5-7 minutes until the broccoli is tender but still bright green.
  4. Give everything a final stir, taste, and adjust the seasoning if necessary. If serving with rice, prepare that according to the package instructions.
  5. Serve the chicken and broccoli warm, over a bed of rice if desired.

Notes

For alternative proteins, consider using halal-certified beef or shrimp. Avoid overcrowding the skillet for even cooking, and store leftovers in an airtight container for up to three days.
