Ingredients
  

Dry Ingredients
  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
Wet Ingredients
  • 1/2 cup unsalted butter, softened Make sure it is at room temperature.
  • 2 pieces eggs Add one at a time.
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
Fruits
  • 1 cup pitted and chopped cherries Can substitute with other fruits if cherries are not in season.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease your loaf pan with non-stick spray.
  2. In a mixing bowl, whisk together the flour, baking powder, and salt.
  3. In another bowl, cream the softened butter and sugar until light and fluffy.
  4. Beat in the eggs one at a time, then mix in the milk and vanilla extract until smooth.
  5. Gradually stir the dry mixture into the wet one, being careful not to overmix. Fold in the chopped cherries gently.
Baking
  1. Transfer the batter to the prepared loaf pan and bake for about 55-65 minutes, or until a toothpick inserted into the center comes out clean.
  2. Allow the loaf to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
