  • 1 cup shredded cheddar cheese (or your favorite cheese) Feel free to experiment with different types of cheese.
  • 1 cup all-purpose flour
  • 1/4 cup unsalted butter, softened
  • 1/2 teaspoon salt
  • 1/4 teaspoon cayenne pepper (optional for a little kick) Optional, for added spice.
  • 2-3 tablespoons cold water Add gradually until dough holds together.

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the flour, salt, and optional cayenne pepper. Mix well.
  3. Add in the shredded cheese and softened butter. Mix until the mixture resembles coarse crumbs.
  4. Pour in the cold water gradually, mixing after each addition until the dough just holds together.
  5. Roll out the dough on a floured surface to about 1/8-inch thickness. Cut into small squares.
  6. Line a baking sheet with parchment paper and place the squares on it. Optionally, poke holes in the center of each square.
  7. Bake in the preheated oven for about 15 minutes or until edges are golden and crispy. Monitor closely.
  8. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

Store leftovers in an airtight container for up to a week or freeze in a zip-lock bag for up to a month. Crisp in a toaster oven before serving again.
