Preparation
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine the flour, salt, and optional cayenne pepper. Mix well.
- Add in the shredded cheese and softened butter. Mix until the mixture resembles coarse crumbs.
- Pour in the cold water gradually, mixing after each addition until the dough just holds together.
- Roll out the dough on a floured surface to about 1/8-inch thickness. Cut into small squares.
- Line a baking sheet with parchment paper and place the squares on it. Optionally, poke holes in the center of each square.
- Bake in the preheated oven for about 15 minutes or until edges are golden and crispy. Monitor closely.
- Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
Store leftovers in an airtight container for up to a week or freeze in a zip-lock bag for up to a month. Crisp in a toaster oven before serving again.
