  • 6 medium potatoes, peeled and sliced thinly
  • 2 cups cheddar cheese, shredded (plus extra for topping)
  • 1 cup milk
  • 4 tablespoons butter Used to cook onions and greasing the dish
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 medium onion, finely chopped
  • 1 teaspoon garlic powder

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Peel the potatoes and slice them thinly, about 1/8 inch thick.
  3. In a skillet over medium heat, melt 2 tablespoons of butter and sauté the chopped onions until they become translucent, about 3-5 minutes.
Assembly
  1. In a greased 9×13-inch casserole dish, start layering: begin with a layer of sliced potatoes, followed by a sprinkle of salt, pepper, and a layer of sautéed onions. Continue layering until all potatoes and onions are used.
  2. In a separate bowl, blend the milk, shredded cheese (reserving a little for topping), garlic powder, and the remaining salt and pepper. Pour this mixture evenly over the layered potatoes.
  3. Finish off by sprinkling the reserved cheese on top.
Cooking
  1. Cover the casserole dish with aluminum foil and bake in the preheated oven for about 45 minutes.
  2. Remove the foil and let it bake for another 15 minutes, or until golden and bubbling.
Serving
  1. Allow to cool for a few minutes before serving. Enjoy!

Notes

For a creamier texture, add sour cream or cream cheese. You can also use cauliflower in place of some potatoes for a healthier option.
