Preparation
  1. Preheat your oven to 375°F (190°C) and prepare a loaf pan by greasing it lightly.
  2. In a large mixing bowl, combine the flour, baking powder, and salt. Mix well.
  3. Fold in the shredded cheese and ensure it’s evenly distributed throughout the dry ingredients.
  4. In another bowl, whisk together the milk and olive oil until blended.
  5. Pour the wet ingredients into the dry mixture and stir gently until just combined. Be careful not to overmix; a few lumps are perfectly fine.
  6. Transfer the batter into your prepared loaf pan, smoothing out the top if necessary.
Baking
  1. Bake in the preheated oven for 25-30 minutes or until the top is golden and a toothpick inserted in the center comes out clean.
  2. Let it cool for a few minutes before slicing and enjoying.

Notes

Store in an airtight container in the refrigerator for 3-4 days. Freeze for up to 2 months. Reheat slices in the toaster or oven at 350°F (175°C) for 10-15 minutes.
