Preparation
- Preheat your oven to 375°F (190°C) and prepare a loaf pan by greasing it lightly.
- In a large mixing bowl, combine the flour, baking powder, and salt. Mix well.
- Fold in the shredded cheese and ensure it’s evenly distributed throughout the dry ingredients.
- In another bowl, whisk together the milk and olive oil until blended.
- Pour the wet ingredients into the dry mixture and stir gently until just combined. Be careful not to overmix; a few lumps are perfectly fine.
- Transfer the batter into your prepared loaf pan, smoothing out the top if necessary.
Baking
- Bake in the preheated oven for 25-30 minutes or until the top is golden and a toothpick inserted in the center comes out clean.
- Let it cool for a few minutes before slicing and enjoying.
Notes
Store in an airtight container in the refrigerator for 3-4 days. Freeze for up to 2 months. Reheat slices in the toaster or oven at 350°F (175°C) for 10-15 minutes.
