Preparation
- Preheat the oven to 375°F (190°C).
- In a skillet, heat the olive oil over medium-low heat. Add the thinly sliced onions, sprinkle with salt, and let them cook, stirring occasionally for about 15 minutes until golden brown and soft.
- Roll out your pie crust and place it in a 9-inch pie dish. Poke a few holes in the bottom to prevent bubbling.
- In a bowl, whisk together the eggs and milk. Add the shredded cheese, caramelized onions, and herbs (if using). Season with salt and pepper, mixing until well combined.
- Pour the filling into the prepared pie crust.
