  • 2 cups rolled oats
  • 1/2 cup almond butter can substitute with peanut butter or sun butter
  • 1/4 cup honey or maple syrup honey can be substituted with agave syrup for a vegan option
  • 1/2 cup mashed banana
  • 1/2 teaspoon vanilla extract
  • 1/2 cup chopped nuts or seeds (optional)
  • 1/2 cup dried fruit (optional) feel free to switch out dried fruits for whatever you love!

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the almond butter, honey or maple syrup, mashed banana, and vanilla extract. Mix until well blended.
  3. Gradually stir in the rolled oats until they are fully coated with the wet mixture. If you're using nuts or dried fruits, fold them in at this point.
  4. Line an 8x8-inch baking dish with parchment paper for easy removal later. Pour the mixture into the prepared dish, pressing it down firmly with a spatula.
  5. Place your dish in the preheated oven and bake for 25-30 minutes or until the edges are golden brown.
  6. Once baked, allow the squares to cool in the dish for about 10-15 minutes, then transfer to a wire rack to cool completely before cutting into squares.

Notes

Store squares in an airtight container for up to a week in the refrigerator or freeze for up to three months. For reheating, microwave for 10-15 seconds or toast in the oven.
