Homemade Blueberry Pop Tarts

Ingredients
  

For the Pastry
  • 2 cups all-purpose flour Unbleached preferred
  • 1/4 cup granulated sugar For sweetness
  • 1/2 teaspoon salt Enhances flavor
  • 1 cup unsalted butter, cold and cubed Keeps the crust flaky
  • 6-8 tablespoons ice water Use as needed to bring dough together
For the Filling
  • 1 cup fresh blueberries Can use frozen, thawed
  • 1/2 cup granulated sugar Adjust based on sweetness preference
  • 1 tablespoon cornstarch To thicken filling
  • 1 teaspoon lemon juice Adds brightness
For Egg Wash and Glaze
  • 1 whole egg (for egg wash) Helps achieve golden color
  • to taste powdered sugar (for glaze) Adjust sweetness in the glaze
  • to taste milk (for glaze, optional) For consistency in glaze

Method
 

Make the Dough
  1. In a large mixing bowl, combine flour, sugar, and salt. Add the cold, cubed unsalted butter.
  2. Use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.
  3. Gradually add ice water, 1 tablespoon at a time, mixing until the dough comes together. Be careful not to overwork it.
Chill the Dough
  1. Divide the dough into two equal parts, form each into a rectangle, wrap in plastic wrap, and refrigerate for at least 30 minutes.
Prepare the Filling
  1. In a saucepan over medium heat, combine blueberries, sugar, cornstarch, and lemon juice.
  2. Cook until the mixture starts to bubble and thicken, around 5-7 minutes. Remove from heat and let cool.
Roll Out the Dough
  1. On a lightly floured surface, roll out one piece of dough to about 1/8-inch thickness. Cut into rectangles (approx. 3×4 inches).
Assemble the Pop Tarts
  1. Spoon a tablespoon of blueberry filling onto half of the rectangles, leaving space around the edges.
  2. Place the other rectangles on top and press to seal the edges, crimping with a fork.
Egg Wash
  1. Preheat the oven to 375°F (190°C). Beat the egg and brush it over the top of the assembled pop tarts for a beautiful golden finish.
Bake
  1. Place on a baking sheet lined with parchment paper and bake for 20-25 minutes, or until golden brown.
Glaze
  1. Once cool, whisk powdered sugar with a small amount of milk to create a glaze. Drizzle over the pop tarts.

Notes

Store leftover pop tarts in an airtight container at room temperature for up to 2 days, or refrigerate for up to a week. You can prepare the dough and filling ahead of time.
