- In a mixing bowl, combine flour, sugar, baking powder, and salt.
- In another bowl, whisk together the egg and milk until smooth.
- Gradually add the wet ingredients to the dry and stir until just combined. Be careful not to overmix.
- Gently fold in the fresh blueberries.
Cooking
- In a deep, heavy pan, heat about 2 inches of vegetable oil over medium heat until it reaches 350°F.
- Using a spoon or small ice cream scooper, carefully drop spoonfuls of the batter into the hot oil.
- Fry them in batches, about 3-4 fritters at a time, for 2-3 minutes on each side until golden brown.
- Once they’re ready, remove them from the oil and let them drain on a paper towel-lined plate.

Notes
To store, place fritters in an airtight container in the refrigerator; they stay fresh for 2-3 days. Freeze for up to a month and reheat in the oven at 350°F for about 10 minutes.
