Ingredients
  

For the Fritters
  • 1 cup all-purpose flour The backbone of your batter.
  • 1 tablespoon sugar Just a hint of sweetness.
  • 1 teaspoon baking powder For that perfect rise.
  • ¼ teaspoon salt To balance flavors.
  • 1 large egg Brings it all together!
  • ¼ cup milk Adds moisture and richness (can use almond or oat milk for a dairy-free option).
  • 1 cup fresh blueberries Make sure they’re plump and juicy!
  • Vegetable oil For frying (peanut oil or canola oil are great alternatives).

Preparation
  1. In a mixing bowl, combine flour, sugar, baking powder, and salt.
  2. In another bowl, whisk together the egg and milk until smooth.
  3. Gradually add the wet ingredients to the dry and stir until just combined. Be careful not to overmix.
  4. Gently fold in the fresh blueberries.
Cooking
  1. In a deep, heavy pan, heat about 2 inches of vegetable oil over medium heat until it reaches 350°F.
  2. Using a spoon or small ice cream scooper, carefully drop spoonfuls of the batter into the hot oil.
  3. Fry them in batches, about 3-4 fritters at a time, for 2-3 minutes on each side until golden brown.
  4. Once they’re ready, remove them from the oil and let them drain on a paper towel-lined plate.
Serving

Notes

To store, place fritters in an airtight container in the refrigerator; they stay fresh for 2-3 days. Freeze for up to a month and reheat in the oven at 350°F for about 10 minutes.
