  • 1/2 cup diced onions Optional.
  • 1/4 cup chopped cilantro For garnish.
  • Salt and pepper To taste.
Main Ingredients
  • 8 pieces corn tortillas Warm slightly before filling.
  • 2 cups enchilada sauce Homemade or store-bought.
  • 1 cup shredded cheese (cheddar or Mexican blend) For topping.

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Warm the tortillas in a dry skillet until pliable.
  3. In each tortilla, add a generous portion of shredded beef, sprinkle onions, and season with salt and pepper.
  4. Roll the tortillas tightly and place them seam-side down in a baking dish.
Baking
  1. Pour enchilada sauce generously over the rolled tortillas.
  2. Sprinkle shredded cheese on top.
  3. Bake for about 20 minutes, or until the cheese is melty and bubbling.

Notes

Consider using leftover beef for flavor enhancement. Warm tortillas to prevent tearing. Avoid overfilling to prevent bursting during baking.
