Dry Ingredients
  • 2 cups all-purpose flour For a healthier version, consider half whole wheat flour.
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
Wet Ingredients
  • 1 cup sugar
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter, softened Make sure to use Halal-friendly butter.
  • 2 large eggs
  • 1 teaspoon vanilla extract
Filling Ingredients
  • 3 cups apples, peeled and diced Use your favorite variety of apples.
  • 1/2 cup chopped walnuts or pecans Optional.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Grease your bundt pan generously with non-stick spray or butter, and lightly dust it with flour.
  3. In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt. Set aside.
  4. In a large mixing bowl, beat the softened butter with sugar and brown sugar until light and fluffy, about 3-4 minutes.
  5. Incorporate the eggs one at a time, mixing well after each addition, then add the vanilla extract.
Mixing and Baking
  1. Gradually fold in the dry ingredient mixture until just combined, being careful not to overmix.
  2. Gently fold in the diced apples and, if using, the chopped walnuts or pecans.
  3. Transfer the batter into the prepared bundt pan and smooth out the top.
  4. Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
Cooling and Serving
  1. Once baked, let the cake cool in the pan for about 10 minutes before inverting onto a cooling rack.
  2. Allow the cake to cool completely before dusting with powdered sugar and slicing.

Notes

Store the cake in an airtight container at room temperature for up to 3 days or freeze slices wrapped individually for up to 3 months. To reheat, microwave for 15-20 seconds or warm in a 175°F (80°C) oven for about 10 minutes.
