Method
Preparation
- Preheat your oven to 350°F (175°C).
- Grease your bundt pan generously with non-stick spray or butter, and lightly dust it with flour.
- In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt. Set aside.
- In a large mixing bowl, beat the softened butter with sugar and brown sugar until light and fluffy, about 3-4 minutes.
- Incorporate the eggs one at a time, mixing well after each addition, then add the vanilla extract.
Mixing and Baking
- Gradually fold in the dry ingredient mixture until just combined, being careful not to overmix.
- Gently fold in the diced apples and, if using, the chopped walnuts or pecans.
- Transfer the batter into the prepared bundt pan and smooth out the top.
- Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
Cooling and Serving
- Once baked, let the cake cool in the pan for about 10 minutes before inverting onto a cooling rack.
- Allow the cake to cool completely before dusting with powdered sugar and slicing.
Notes
Store the cake in an airtight container at room temperature for up to 3 days or freeze slices wrapped individually for up to 3 months. To reheat, microwave for 15-20 seconds or warm in a 175°F (80°C) oven for about 10 minutes.
