  • 1 pound Halal beef or chicken, cut into bite-sized chunks Ensure the meat is Halal certified.
Vegetables
  • 3 cups mixed vegetables (bell peppers, carrots, and peas)
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 2 medium potatoes, diced
  • 1 can (14.5 oz) diced tomatoes, drained
Liquid Ingredients
  • 4 cups beef or chicken broth (Halal-certified) Ensure the broth is Halal certified.
Seasonings
  • 2 tablespoons olive oil
  • 1 tablespoon Worcestershire sauce (ensure it’s Halal)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • to taste Salt and pepper
Garnish
  • Fresh parsley For garnish, optional.

Method
 

Cooking Instructions
  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and garlic, cooking until translucent and fragrant, about 2-3 minutes.
  2. Increase the heat to medium-high. Add the Halal beef or chicken to the pot, cooking until browned on all sides—approximately 5-7 minutes.
  3. Stir in the mixed vegetables, potatoes, and the can of diced tomatoes. Combine everything well to ensure that the meat and veggies are evenly distributed.
  4. Add the Halal broth to the pot and bring everything to a boil. Once boiling, lower the heat to a simmer.
  5. Add Worcestershire sauce, thyme, oregano, and season with salt and pepper to taste. Let it simmer uncovered for about 30-40 minutes, stirring occasionally until the vegetables are tender.
  6. Take a moment to taste the stew. Adjust the seasoning if necessary, and remove it from heat.
  7. Ladle the savory Hobo Stew into bowls and garnish with fresh parsley if desired. Enjoy with crusty bread or a side salad!

Notes

Hobo Stew can be easily adapted by swapping the type of meat or using vegetarian options like lentils or chickpeas. Timing is crucial; letting it simmer longer enhances flavor. Store in the fridge for up to 3-4 days or freeze for up to 3 months.
