- Stir in the mixed vegetables, potatoes, and the can of diced tomatoes. Combine everything well to ensure that the meat and veggies are evenly distributed.
- Add the Halal broth to the pot and bring everything to a boil. Once boiling, lower the heat to a simmer.
- Add Worcestershire sauce, thyme, oregano, and season with salt and pepper to taste. Let it simmer uncovered for about 30-40 minutes, stirring occasionally until the vegetables are tender.
- Take a moment to taste the stew. Adjust the seasoning if necessary, and remove it from heat.
- Ladle the savory Hobo Stew into bowls and garnish with fresh parsley if desired. Enjoy with crusty bread or a side salad!
