Preparation
- Preheat your oven to 350°F (175°C).
- In a large skillet over medium heat, brown the ground beef with the diced onion, stirring until the meat is fully cooked and the onion is soft.
- Stir in the frozen mixed vegetables and let it cook for another 5 minutes until heated through.
- Add the cream of mushroom soup and the onion soup mix to the skillet, and mix well until everything is evenly coated.
- In a large bowl, combine the cooked rice or pasta with the meat mixture, mixing well to ensure it’s evenly distributed.
- Transfer the mixture to a greased casserole dish and spread it out evenly.
- Top with the shredded cheese and season with salt and pepper to taste.
- Cover with foil and bake for 30 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.
- Once baked, take it out of the oven and let it cool for a few minutes before serving.
Notes
For variations, swap ground beef for turkey or chicken, stay creamy with sour cream or cream cheese, and store leftovers in an airtight container for 3-4 days.
