  • 1 pound ground beef (or ground turkey)
  • 1 medium onion, diced
  • 2 cups frozen mixed vegetables (peas, carrots, corn, etc.)
  • 1 can cream of mushroom soup (or cream of chicken)
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 packet onion soup mix
  • 4 cups cooked rice or pasta (your choice)
  • Salt and pepper to taste

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet over medium heat, brown the ground beef with the diced onion, stirring until the meat is fully cooked and the onion is soft.
  3. Stir in the frozen mixed vegetables and let it cook for another 5 minutes until heated through.
  4. Add the cream of mushroom soup and the onion soup mix to the skillet, and mix well until everything is evenly coated.
  5. In a large bowl, combine the cooked rice or pasta with the meat mixture, mixing well to ensure it’s evenly distributed.
  6. Transfer the mixture to a greased casserole dish and spread it out evenly.
  7. Top with the shredded cheese and season with salt and pepper to taste.
  8. Cover with foil and bake for 30 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.
  9. Once baked, take it out of the oven and let it cool for a few minutes before serving.

Notes

For variations, swap ground beef for turkey or chicken, stay creamy with sour cream or cream cheese, and store leftovers in an airtight container for 3-4 days.
