- In a large pot, bring water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet over medium heat, add the ground turkey or chicken. Season with salt and pepper. Cook until browned, about 5-7 minutes, breaking it apart with a spatula.
- Stir in the black beans, taco seasoning, canned diced tomatoes (with their juice), and corn. Cook for an additional 5 minutes, allowing the flavors to meld.
- Add the cooked pasta to the skillet and mix thoroughly. Stir in half of the shredded cheese and combine until melted and creamy.
- Spoon the High-Protein Taco Pasta into bowls, topping with remaining cheese and garnishing with fresh cilantro or green onions.
Notes
Store leftovers in an airtight container for up to 3-4 days in the refrigerator. For longer storage, freeze in freezer-safe containers for up to 3 months.
