- Preheat your oven to 350°F (175°C).
- In a skillet over medium heat, sauté the diced bell peppers and onions until tender and fragrant, about 3-5 minutes. Add the chopped spinach and stir until wilted. Remove from heat and set aside.
- In a large mixing bowl, whisk together the eggs, cottage cheese, and shredded cheese. Season with salt and pepper to taste.
- Fold the sautéed vegetables into the egg and cheese mixture. If using a pie crust, place it in a pie dish, pour the filling into the crust, or simply pour the filling into a greased pie dish for a crustless option.
- Place the quiche in the preheated oven and bake for 30-35 minutes, or until the edges are golden and the center is set. A knife inserted in the center should come out clean.
- Allow the quiche to cool for a few minutes before slicing. Serve warm, and enjoy!
