  • 6 large large eggs
  • 1 cup cottage cheese
  • 1 cup shredded cheese (cheddar or Swiss)
  • 1 cup chopped spinach
  • 1/2 cup diced bell peppers
  • 1/2 cup chopped onions
  • Salt and pepper to taste
  • 1 pie crust pie crust (optional) For a crustless version, simply omit this.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a skillet over medium heat, sauté the diced bell peppers and onions until tender and fragrant, about 3-5 minutes. Add the chopped spinach and stir until wilted. Remove from heat and set aside.
  3. In a large mixing bowl, whisk together the eggs, cottage cheese, and shredded cheese. Season with salt and pepper to taste.
  4. Fold the sautéed vegetables into the egg and cheese mixture. If using a pie crust, place it in a pie dish, pour the filling into the crust, or simply pour the filling into a greased pie dish for a crustless option.
  5. Place the quiche in the preheated oven and bake for 30-35 minutes, or until the edges are golden and the center is set. A knife inserted in the center should come out clean.
  6. Allow the quiche to cool for a few minutes before slicing. Serve warm, and enjoy!

Notes

Customize your ingredients: Feel free to substitute the spinach with kale or add your favorite veggies such as mushrooms or zucchini. Timing is key: Make sure not to overbake. The quiche should be set but still slightly soft in the center. Experiment with flavors: Boost the flavor by adding herbs like thyme or rosemary.
