  • 4 medium sweet potatoes Choose evenly shaped for consistent cooking.
  • 1 pound ground turkey Lean protein option.
  • 1 medium bell pepper, diced Any color bell pepper can be used.
  • 1 medium onion, chopped Yellow or white onion works best.
  • 2 cloves garlic, minced Fresh for better flavor.
Spices
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • to taste Salt and pepper
Garnish
  • to taste Fresh parsley or cilantro Optional for garnish.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Wash and prick the sweet potatoes with a fork. Place them on a baking sheet and bake for about 45 minutes or until tender.
Cooking
  1. In a large skillet over medium heat, add a drizzle of olive oil. Sauté the onion and garlic until they become translucent, about 2–3 minutes.
  2. Add the ground turkey to the skillet and cook until browned. Once cooked, stir in the bell pepper, smoked paprika, cumin, chili powder, salt, and pepper. Cook for an additional 5 minutes, allowing the flavors to meld.
Assembly
  1. Once the sweet potatoes are done baking, remove them from the oven and let them cool for a few minutes. Slice them open and scoop out a bit of the flesh to make room for the turkey filling.
  2. Spoon the delicious ground turkey mixture into each sweet potato. Garnish with fresh parsley or cilantro if desired. Enjoy your meal hot!

Notes

Store leftovers in an airtight container in the fridge for up to three days. Reheat in the oven or microwave.
