  • 1 pound chicken breast, diced
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon soy sauce (low sodium preferred)
  • 1 teaspoon paprika
  • 1 bunch Fresh parsley or green onions for garnish (optional) For garnish

Preparation
  1. Gather all the ingredients listed above. Make sure your chicken is diced into bite-sized pieces, and your garlic is minced for the best flavor release.
Cooking
  1. In a large skillet over medium heat, add the olive oil. Once it’s hot, toss in the diced chicken. Season with salt, pepper, and paprika. Cook for about 5-7 minutes, or until the chicken pieces are golden brown and cooked through.
  2. Push the chicken to one side of the skillet, and add the minced garlic to the empty space. Sauté the garlic for about 30 seconds to 1 minute until it becomes fragrant.
  3. Add the cooked rice to the skillet, mixing everything well. Drizzle the soy sauce over the rice and continue to stir to combine all the ingredients, ensuring the garlic flavor is evenly distributed.
  4. Remove the skillet from the heat. Sprinkle fresh parsley or chopped green onions over the top before serving. Enjoy your High-Protein Garlic Chicken Rice while it’s hot!

Notes

If you don’t have chicken breast on hand, you can easily swap it for chicken thighs or even tofu for a vegetarian version. Store leftovers in an airtight container in the refrigerator for up to 3 days, or freeze for up to 3 months.
