Preparation
- Preheat the oven to 350°F (175°C).
- In a large mixing bowl, combine flour, protein powder, baking powder, and cinnamon. Stir until well mixed.
- In a separate bowl, mix Greek yogurt, applesauce, almond milk, sweetener, and vanilla extract until smooth.
- Gradually add the wet mixture to dry ingredients, stirring until a soft dough forms.
- On a lightly floured surface, roll out the dough into a rectangle about 1/2 inch thick.
- Spread additional cinnamon and sweetener on top, roll tightly, and slice into 1-2 inch pieces.
Baking
- Place the rolls in a greased baking dish and bake for 20-25 minutes or until golden brown.
- Let them cool slightly before serving.

For best results, avoid overmixing the dough and let the rolls cool slightly before serving. You can top with honey or nuts if desired.
