Preparation
- Preheat your oven to 350°F (175°C).
- Lightly grease a loaf pan with cooking spray or line it with parchment paper.
- In a large mixing bowl, mash the ripe bananas with a fork until smooth.
- Add Greek yogurt, honey or maple syrup, and vanilla extract to the mashed bananas. Mix well until fully combined.
- In a separate bowl, whisk together cocoa powder, protein powder, oats, baking powder, baking soda, and salt.
- Gradually add the dry mixture into the wet ingredients. Stir until just combined.
- Fold in chocolate chips gently.
- Pour the batter into the prepared loaf pan and spread it evenly.
Baking
- Bake for 50 minutes or until a toothpick inserted in the center comes out clean.
- Allow the bread to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely before slicing.
Notes
Consider using almond flour or oats for a gluten-free option. Substitute honey with agave syrup for a vegan version. Let the bread sit for a few hours before slicing for richer flavor. Store in an airtight container for up to 1 week or freeze for up to 3 months.
