Preparation
- Preheat your oven to 350°F (175°C).
- Grease a standard loaf pan lightly with cooking spray or line with parchment paper.
- In a large mixing bowl, combine the mashed bananas, Greek yogurt, peanut butter, honey (or maple syrup), and vanilla extract. Mix until smooth and creamy.
- In another bowl, whisk together the rolled oats, cocoa powder, baking powder, and salt until well combined.
- Gradually fold the dry ingredients into the wet mixture. Stir just until fully incorporated.
- If desired, fold in chocolate chips.
Baking
- Pour the batter into the prepared loaf pan and smooth the top with a spatula.
- Bake for 45-50 minutes or until a toothpick inserted in the center comes out clean.
Cooling
- Once baked, remove from oven and let the loaf cool in the pan for 10 minutes before transferring it to a wire rack.
- Slice, serve, and enjoy!
