Ingredients
  

Main Ingredients
  • 2 cups cooked chicken, shredded Make sure your chicken is halal.
  • 6 cups chicken broth Preferably homemade or quality store-bought.
  • 2 cups egg noodles
  • 1 cup carrots, sliced
  • 1 cup celery, sliced
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 teaspoon thyme
  • 1 teaspoon parsley

Method
 

Cooking the Vegetables
  1. In a large pot, heat a splash of oil over medium heat. Add the diced onions and cook until they are translucent, around 3-4 minutes.
  2. Stir in the minced garlic, sliced carrots, and celery. Continue to sauté for another 5 minutes until the vegetables are softened.
Adding Broth and Seasonings
  1. Pour in the 6 cups of chicken broth and bring the mixture to a simmer.
  2. Season with salt, pepper, thyme, and parsley.
Introducing Noodles and Chicken
  1. Once the broth is simmering, add the egg noodles and shredded chicken to the pot.
  2. Let it cook for an additional 6-8 minutes, or until the noodles are tender.
Serving
  1. Taste the soup and adjust the seasonings if needed.
  2. Serve hot, garnished with fresh parsley for a pop of color and flavor.

Notes

For storing, refrigerate in an airtight container for up to 4 days or freeze for 2-3 months. Reheat in a pot over medium heat, adding a splash of water or broth if needed. Avoid using low-quality broth to maintain flavor. This soup is suitable for meal prep.
