- Rinse 1 cup of quinoa under cold water. In a medium saucepan, combine the rinsed quinoa with 2 cups of water. Bring it to a boil, then reduce heat to low, cover for about 15 minutes until water is absorbed. Fluff with a fork and set aside.
- In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add 1 pound of ground beef. Season with salt and pepper. Cook for about 7-10 minutes or until browned and fully cooked, breaking it up as it cooks.
- Chop lettuce, tomatoes, pickles, and onions while the beef is cooking.
- Start with a base of quinoa (about 1/2 cup per bowl). Layer the cooked ground beef on top, followed by 1/4 cup of shredded cheddar cheese.
- Add the chopped lettuce, tomatoes, pickles, and onions as per your preference.
- Drizzle your chosen sauce over the top to add flavor and creaminess.
- Serve the bowls warm and enjoy with your loved ones!
Notes
You can swap ground beef for ground turkey or chicken for a lighter option, or even a plant-based alternative. Prepare ingredients in advance to save time. Avoid overcooking the meat for juicier results.
