Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine the shredded chicken, buffalo sauce, cream cheese, cheddar cheese, and chopped green onions. Stir well and season with salt and pepper.
  3. Lightly warm your tortillas in the microwave for about 20-30 seconds to make them pliable.
  4. Spoon the buffalo chicken mixture onto each tortilla, spread it towards one end, and roll it up tightly.
  5. Place the taquitos seam-side down on a baking sheet lined with parchment paper and brush them lightly with olive oil.
  6. Bake in the preheated oven for about 15 minutes or until golden brown and crispy.
  7. Remove from the oven and let them cool for a few minutes before serving with your favorite toppings.

Notes

Substitutions include using shredded turkey or a plant-based protein like jackfruit. Ensure to roll tightly to prevent unrolling during baking. Store leftovers in an airtight container for up to 3 days, or freeze for up to 2 months.
