Ingredients
  

For the Burrito Filling
  • 4 large large eggs
  • 1 cup egg whites
  • 1 cup black beans, drained and rinsed
  • 1 cup cooked and crumbled turkey sausage Cook according to package instructions if not pre-cooked
  • 1 cup shredded cheese (cheddar or pepper jack)
  • 4 large whole wheat tortillas
  • 1 cup diced bell peppers
  • 1/2 cup chopped onions
  • to taste salt and pepper

  • fresh cilantro

Method
 

Preparation
  1. Dice the bell peppers and chop the onions. Drain and rinse the black beans. Cook the turkey sausage if not using pre-cooked.
Cooking
  1. In a medium bowl, whisk together the eggs, egg whites, salt, and pepper.
  2. Heat a skillet over medium heat. Add oil if necessary, then sauté the diced bell peppers and onions until tender, about 5-7 minutes.
  3. Pour the whisked eggs into the skillet with the vegetables and cook, stirring gently, until fluffy and cooked through, about 5 minutes.
  4. Add the crumbled turkey sausage and black beans to the skillet, stirring to combine and heating through for another minute.
Assembly
  1. Take a tortilla and place about 1/4 of the egg mixture in the center. Sprinkle with shredded cheese and roll tightly, folding in the sides to secure the filling.
  2. Optionally, return the wrapped burrito to the skillet and toast for a minute or two on each side for a crispy texture.
Serving
  1. Slice the burrito in half and serve with your favorite toppings like salsa, avocado, or cilantro.

Notes

Store leftovers in the refrigerator for up to 3 days or freeze for up to 3 months. Reheat in the microwave or oven for best results.
