  • 4 large large eggs
  • 1 cup egg whites
  • 1 cup black beans, drained and rinsed
  • 1 cup cooked chicken breast, shredded Ensure it's halal
  • 1 cup spinach, chopped
  • 1/2 cup shredded cheese (e.g., cheddar or mozzarella)
  • 4 whole wheat tortillas whole wheat tortillas
  • Salt and pepper to taste
  • Salsa for serving (optional)

Method
 

Preparation
  1. In a large mixing bowl, whisk together the eggs and egg whites. Add salt and pepper to taste.
  2. In a non-stick skillet over medium heat, add a little oil if needed and sauté the chopped spinach until wilted, about 2-3 minutes. Stir in the black beans and shredded chicken until everything is heated through.
  3. Pour the egg mixture into the skillet with the chicken and spinach. Stir gently and cook for about 4-5 minutes until the eggs are fully cooked. Stir in the cheese until melted and combined.
  4. Place about 1/4 of the egg mixture on the center of each tortilla. Fold the sides over the filling, then roll the burrito tightly from the bottom up to enclose the filling.
  5. For extra crispiness, you can grill the burritos in the skillet for an additional 2-3 minutes on each side until golden brown.
  6. Serve warm with salsa on the side for dipping.

Notes

You can substitute chicken with turkey or any halal protein source you prefer. Tofu or tempeh are also great vegetarian options. Make sure your skillet is hot before adding the egg mixture for the fluffiest texture. Avoid overcooking the eggs; they should be soft and slightly creamy for added flavor.
