Preparation
- Preheat your oven to 350°F (175°C).
- In a medium bowl, combine flour, powdered sugar, cornstarch, and salt. Cut in softened butter until the mixture resembles coarse crumbs. Press mixture into the bottom of an ungreased 8×8 inch baking dish. Bake for about 15 minutes or until lightly golden.
Filling
- In another bowl, whisk together granulated sugar, lemon juice, lemon zest, ground hibiscus flowers, eggs, and baking powder until smooth. Pour this mixture over the baked crust.
Baking
- Return the dish to the oven and bake for an additional 20-25 minutes, or until the filling is set and lightly browned on top.
- Remove from the oven and allow the bars to cool completely in the pan.
- Cut into squares and dust with powdered sugar before serving.
Notes
Store in an airtight container in the refrigerator for about a week. Freeze individual squares wrapped in plastic wrap for up to three months. Thaw in the refrigerator before serving.
