Ingredients
  

For the crust
  • 1 cup all-purpose flour
  • 1/2 cup powdered sugar
  • 1/4 cup cornstarch
  • 1/2 cup unsalted butter, softened Make sure butter is at room temperature for better texture.
  • 1/4 teaspoon salt
For the filling
  • 1/2 cup granulated sugar
  • 1/4 cup fresh lemon juice
  • Zest of 1 lemon
  • 2 teaspoons dried hibiscus flowers, ground
  • 3 large eggs
  • 1/4 teaspoon baking powder

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, combine flour, powdered sugar, cornstarch, and salt. Cut in softened butter until the mixture resembles coarse crumbs. Press mixture into the bottom of an ungreased 8×8 inch baking dish. Bake for about 15 minutes or until lightly golden.
Filling
  1. In another bowl, whisk together granulated sugar, lemon juice, lemon zest, ground hibiscus flowers, eggs, and baking powder until smooth. Pour this mixture over the baked crust.
Baking
  1. Return the dish to the oven and bake for an additional 20-25 minutes, or until the filling is set and lightly browned on top.
  2. Remove from the oven and allow the bars to cool completely in the pan.
  3. Cut into squares and dust with powdered sugar before serving.

Notes

Store in an airtight container in the refrigerator for about a week. Freeze individual squares wrapped in plastic wrap for up to three months. Thaw in the refrigerator before serving.
