Preparation
- Preheat your oven to 400°F (200°C).
- Roll out your puff pastry on a lightly floured surface to fit your tart pan. Transfer it to the pan, gently pressing it into corners. Cut off any excess pastry hanging over the edges.
- Layer the sliced heirloom tomatoes on top of the pastry, slightly overlapping them.
- Drizzle the olive oil over the tomatoes and sprinkle with salt, pepper, and half of the fresh basil.
Baking
- Bake the tart in the oven for about 25 minutes or until the pastry is golden brown and crispy.
- In the last 5 minutes of baking, sprinkle your choice of cheese over the tomatoes.
- Remove from the oven and sprinkle the remaining fresh basil on top.
Serving
- Allow the tart to cool for a few minutes, cut into slices, and serve warm or at room temperature.
Notes
For a variation in flavor, consider using feta or ricotta cheese. Ensure to pat the tomatoes dry to prevent the tart from becoming watery.
