Main Ingredients
  • 3-4 medium Heirloom tomatoes, sliced Use assorted colors for a vibrant tart.
  • 1 sheet Puff pastry, thawed Ensure the puff pastry is fully thawed before use.
  • 3 tablespoons Olive oil Extra virgin olive oil for best flavor.
  • 1 teaspoon Salt
  • 1/2 teaspoon Pepper
  • 1/4 cup Fresh basil, chopped Reserve some for garnish.
  • 1 cup Cheese (goat cheese or mozzarella recommended) Cheddar or feta can be used as alternatives.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Roll out your puff pastry on a lightly floured surface to fit your tart pan. Transfer it to the pan, gently pressing it into corners. Cut off any excess pastry hanging over the edges.
  3. Layer the sliced heirloom tomatoes on top of the pastry, slightly overlapping them.
  4. Drizzle the olive oil over the tomatoes and sprinkle with salt, pepper, and half of the fresh basil.
Baking
  1. Bake the tart in the oven for about 25 minutes or until the pastry is golden brown and crispy.
  2. In the last 5 minutes of baking, sprinkle your choice of cheese over the tomatoes.
  3. Remove from the oven and sprinkle the remaining fresh basil on top.
Serving
  1. Allow the tart to cool for a few minutes, cut into slices, and serve warm or at room temperature.

Notes

For a variation in flavor, consider using feta or ricotta cheese. Ensure to pat the tomatoes dry to prevent the tart from becoming watery.
