Preparation
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Roll out the puff pastry sheets on a lightly floured surface and cut them into squares about 4 inches by 4 inches.
- In a mixing bowl, combine the pitted cherries, sugar, cornstarch, and vanilla extract. Stir until the cherries are well coated.
- Place a spoonful of the cherry mixture in the center of each pastry square. Leave enough space on the edges for sealing.
- Fold the pastry over the filling to create a triangle. Press the edges to seal using a fork, crimping them to ensure no filling leaks out during baking.
- Beat the egg and brush it over the top of each turnover to give them a beautiful golden finish.
Baking
- Place the turnovers on the prepared baking sheet and bake for 20-25 minutes, or until golden brown.
- Allow them to cool for a few minutes and dust with powdered sugar before serving.
Notes
Feel free to use other fruits like blueberries or apples if cherries aren’t on hand, adjusting the sugar based on the fruit’s natural sweetness. Make sure the pastries are cold when you fill and bake them for a flaky texture. Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to 3 months.
