  • 2 cups cottage cheese High in protein, the base of the bake.
  • 1 cup diced bell peppers Any color is fine.
  • 1 cup diced zucchini Fresh for added crunch.
  • 1 cup chopped spinach Can substitute with any leafy vegetable.
  • 1 cup shredded cheese Mozzarella or cheddar are recommended.
  • 1 large egg egg Binding agent.
  • 1/2 cup breadcrumbs Whole-wheat optional.
  • 1 teaspoon garlic powder Adds flavor.
  • 1 teaspoon onion powder Adds flavor.
  • Salt and pepper, to taste Adjust according to preference.
  • optional Fresh herbs (like parsley or basil) For garnish.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Wash and chop the vegetables including bell peppers, zucchini, and spinach.
  3. In a large mixing bowl, combine the cottage cheese, diced vegetables, shredded cheese, egg, garlic powder, onion powder, and season with salt and pepper. Stir until well mixed.
  4. Pour the mixture into a greased baking dish, making sure it's spread evenly.
  5. Sprinkle the breadcrumbs evenly across the top of your mixture, adding additional cheese if desired.
Baking
  1. Place your dish in the preheated oven and bake for about 30-35 minutes, or until the top is golden brown and crispy.
  2. Once done, let it sit for a few minutes before serving to allow the layers to set for perfect slices.

Notes

Feel free to swap out veggies based on what's available. Avoid over-mixing to keep layers intact. Store leftovers in the fridge for up to 3 days or freeze for 2 months. Reheat at 350°F (175°C) for 15-20 minutes.
