  • 1 pound ground turkey Can substitute with ground chicken or lean beef.
  • 1 whole onion, chopped
  • 2 whole carrots, diced
  • 2 whole celery stalks, diced
  • 3 cups chicken broth Adjust based on soup thickness preference.
  • 1 can diced tomatoes
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • to taste Salt Adjust to preference.

  • 2 cups spinach or kale (optional) Add for extra nutrition.

Cooking
  1. Heat a large pot over medium heat and add the ground turkey. Cook until browned, stirring frequently.
  2. Add the chopped onion, carrots, and celery to the pot. Sauté until the vegetables are tender, about 5 minutes.
  3. Pour in the chicken broth and diced tomatoes, mixing well.
  4. Season with garlic powder, dried thyme, salt, and pepper to taste.
  5. Bring the soup to a gentle boil, then lower the heat and let it simmer for about 20 minutes.
  6. If using, stir in the spinach or kale and cook for a few more minutes until wilted.
  7. Taste and adjust the seasonings as necessary, then serve hot!

Notes

To store leftovers, keep in an airtight container in the refrigerator for up to three days, or freeze for about three months. Reheat gently on the stove or microwave, adjusting consistency if needed.
